Served chilled this Classic Junmai Sake offers a very fine texture with harmonious aromas and flavors of macadamia nuts, Chai spice (cardamom, nutmeg), vanilla, heavy cream, and freshly sliced bread.

Served at room temperature, notes of mineral, creme fraiche, sourdough bread, custard, umami, and apples emerge.

When warmed to around 100º F., the texture and flavor build, bringing out more intense umami while still retaining softness of texture. Savory elements of salted custard, cocoa nib, banana bread, toasted nuts, and mineral are evident.

 

 

 

 

 

SHO CHIKU BAI PREMIUM GINJO

 

This dry, delicate and fruity sake features a smooth, silky texture, tinged with aromas and flavors of pear, melon, honeysuckle, custard, and nutmeg. The finish is clean and refreshing with an emerging taste of lightly salted fruit. This sake is compared to Pinot Blanc of medium-bodied, fruity, and soft. 

In 1992, Takara introduced the first ginjo sake made in the USA, Sho Chiku Bai Premium Ginjo. This junmai ginjo sake is brewed in Berkeley with Calrose polished to 50%. Since then, it remains one of the top-selling junmai ginjo sake in the US.

 

SHO CHIKU BAI TOKUBETSU JUNMAI

 

You have so many choices when it comes to sake, so why should you sample our Sho Chiku Bai Tokubetsu Junmai? The versatility of this unique beverage keeps people coming back to it again and again. It’s unlike any type of wine or beer you’ve tasted before. It has a slight sweetness that gets stronger when you chill it, and when you drink it warm, it gets a little spicier. You’ll enjoy these subtle changes throughout your drinking experience — it’s one reason people adore our 300ml Tokubetsu sake.

As the word, Tokubetsu means “special,” the sake is created with rice polished to 60%. While it is ideal for food pairing with rich in umami, particularly when served warm, the sake-making combined with the GinJikomi process of low-temperature fermentation provides subtle, fruity flavors with smooth texture and body. It is perfect for serving both chilled or warmed.

Served warm, this premium Junmai sake presents with aromas of warmed buckwheat, spice, damp wood and hot, briny water. Flavors of dried mushroom, spice and dashi prevail. As the sake cools, the flavor focus evolves toward a suggestion of wheat toast, accented by melon, and salted Asian pear.

Served chilled, aromas and flavors of less intensity and a different character emerge; the sake becomes slightly fuller, with aromas and flavors of mineral, vanilla, custard, cinnamon, fresh dough, and toasted rice.

The Tokubetsu Junmai type sake displays a wide range of flavors depending on whether you serve it warmed or at room temperature. The flavors and aromas of this sake change substantially with temperature but remain complex and nuanced. When warmed to 100º -104º F., it is savory and full-bodied, with aromas and flavors of white mushroom, bran, salted cucumber and umami, balanced by subtle hints of banana and white flowers. Unlike other sake types, Sho Chiku Bai Organic Nama is micro-filtered rather than being pasteurized by heat. While high temperatures can change the subtle flavors of sake, the micro-filtration process retains the original nama (young and fresh) flavors. It is rich and savory with comforting aromas and is brewed in Berkeley with premium organic Calrose rice polished to 60%. This junmai sake is one of the best food pairing sake along with Sho Chiku Bai Classic Junmai.

 

                Sho Chiku Bai Shirakabegura MIO Sparkling Sake

MIO is a festive, sparkling sake, bright with aromas of peach, ripe persimmon, freesia, and fresh bread. Its gentle effervescence creates a refreshing piquancy in the mouth, and sets off the flavors of pear and peach, with accents of yellow rose and baking spice.

MIO is made entirely from rice and koji rice, and contains no flavoring agents or sweeteners. The sake’s 5% alcohol content makes it great for casual enjoyment. We recommend chilling MIO to between 0°C (32°F) and 5°C (41°F). MIO takes on a clearer taste as it nears 0°C (32°F), and the sweetness from rice expands at around 5°C (41°F). You can chill the glass to further enhance the taste.

Since going on sale in June 2011, MIO now holds an overwhelming share of the sparkling sake market. Simply put, it’s number one in the world. The name MIO, refers to the flow of shallow water and the foam formed from a passing ship. The shallowness and foam are metaphors for the low alcohol contents and carbonation respectively, and name represents our desire to create a new path for sake. Applying traditional sake-making craftsmanship and modern technology to produce a sake worthy of
TAKARA mark. This is a refined sake with flavors and aromas that are subtle and soothing.
