REFINING

-Aging in cement tanks until the wine is fully ripe before further refining in the bottle for about 2 months.

Opera Maestra Chianti

In a traditional way using selected yeasts at a controlled temperature of 23°C in stainless steel cooled tanks, in contact with the skins for about 14 days, Addition of overripe grapes left cut on the plants to dehydrate to “govern” the wine and give it structure, alcohol content and extra roundness. Must and over ripe grapes are pumped over for 5 days.

Tasting note
The Ripasso Corte SantAnna delights with its strong ruby red. The nose impresses with typical aromas of dried fruits, raisins, dark berries and some tobacco. On the palate, it is again very fruity and spicy with a slightly sweet tip, round tannins and a velvety mouthfeel. An extremely fruity ripasso for every occasion.

Vinification
“Ripasso translates as much as “another passage.” This is also how a ripasso is made. After fermentation of Valpolicella is complete, the young wine is fermented again on unpressed grape skins from Amarone production. This process gives Valpolicella more body, more character and more flavor. The Corte Sant Anna is fermented in steel tanks and then aged for 12 months in large wooden barrels. In contrast to the more complex Ripasso Classico from Rubinelli, Corte SantAnna also buys grapes from friendly winemakers and the wine is aged in wood for a little less time.”

It is a well-structured wine with a notable alcohol content. Its color is a brilliant ruby red, and its aroma evokes red ripe fruits preserved in spirits, cherry, chocolate, and coffee. The taste is velvety, warm, and very elegant.

Production Notes
The harvest is done by hand between the end of September and beginning of October using small crates to preserve the quality of the grapes. Then, the selected grapes rests for four months in a fruit bed carved into tufa rock, allowing the natural withering process (appassimento) to complete. Between January and February, The grapes undergo fermentation and maceration at a controlled temperature. This is followed by a 36-month aging process in a 52 hl oak barrel.
Food & Wine Pairing
This wine pairs excellently with stews, stracotto, or brasato (meat stewed in red wine), and generally all dishes with high aromatic persistence. We recommend opening the bottle some time before serving and letting it rest at cellar temperature.
More Information
Corte S. Anna is the name of the courtyard located in front of the restored tufa country house. It is symbolized by the weathervane in the courtyard, which features a rooster. The label Corte Sant’ Anna identifies our younger Amarone, which has a shorter aging period.
